Lasagna, without the noodles. Not low calorie, but low carb and really good!

Been trying to duplicate my mom’s lasagna for years.  This, I think, will be as close as I get without noodles.  I have the cheese right and seasoning.

What I learned from tasting this one is that if you don’t have fresh basil, it is better to also add some oregano.  One or two teaspoons seemed to help.  The fresh from the garden basil is amazing and guess I will not have that till the spring!

You will need:
3 zucchini or 4 if small
A cup or two of fresh spinach
1/2 pound of swiss and mozzarella cheese
about a 1/4 pound of sharp cheddar
Cottage Cheese 16oz
2 eggs
about 3/4 cup of parmigiana cheese
1 pound hot Italian sausage
1 pound Italian sausage
