Hashbrown Casserole! | Good and Quick recipe | Can be made night before!

I was not able to recreate my mom’s egg casserole once.   It just took some time I did have and I didn’t have all the ingredients.  This is great.  Everything can either be frozen till used or kept in pantry.  There are options for this as well.  Either cream of potato or mushroom works well!

Ingredients

  • 1 (32 ounce) package frozen hash brown potatoes  (I can only find 30 oz packs and that 2oz doesn’t seem to matter.
  • 8 ounces cooked, diced ham ( I tried sausage and was not nearly as good and I love sausage and can usually pass on ham)
  • 2 (10.75 ounce) cans condensed cream of potato soup
  • 1 (16 ounce) container sour cream
  • 2 cups shredded sharp Cheddar cheese, or a little more.
  • 2 cups grated Parmesan cheese (1/2 cup for top during last 15 minutes of cooking!

To really make this unique and you have a Big Green Egg, or that type of grill, Put it there with some smoke, and boy does that make a difference!
